Zingy raw lemon bliss balls


I must come up with a good name for these… but I can’t think of anything catchy. Lemon fat bombs? Zingy Globes? Since they are covered in coconut, I could just call them snowballs. Ah well, I’ll think of something. For now, it’s fun to see peoples’ reactions when I offer them big ole bite of these Zingy lemon balls. They’re really zingy & good though! And not too sweet either, in fact I made these with a few drops of stevia so they are completely SUGAR FREE!

I’m probably not much help to you with my measurements though, but if you make balls frequently you will know that if you add a bit of this and that you can create balls that work.

Heres the list of ingredients I used: my quantities are absolute guesses though!

1/2 Cup desiccated coconut, 1/8 cup coconut flour, 3 tbsp coconut oil, 2-3 tbsp butter, 1/2 large avocado, 2 tbsp coconut yoghurt, rind & juice of 2 lemons, a couple of drops liquid stevia, rolled in coconut strips
