Gluten Free Cauliflower Fritters – Recipe

Here it is for all you GLUTEN FREE cauliflower fritter lovers!!!
Ingredients
1/2 large cauliflower cut into smallish pieces and steamed until quite soft
1 egg
2 tbsp buckwheat flour
2 tbsp almond meal (ground almonds)
1/4 red chilli
1/2 tsp smoked paprika
Parsley sprig finely chopped
1 clove garlic finely diced
Coconut or Olive oil for shallow frying
Mash cooked cauliflower well or throw all ingredients into a food processor, add all ingredients to combine. Heat coconut oil over medium heat and shallow fry for around 3-4 minutes on each side.
I have served mine up with a few slices of cucumber & fresh homegrown sprouts with garlic Aioli…so yummy!
