Like pretty much everyone else in the universe I love ice cream! But like many of you, most dairy products make my gut squirm.

I found some pretty good rice and coconut milk options, but it was still definitely a once in a while treat because of the huge ingredient lists on most of them. Recently I stumbled upon a “recipe” for banana ice cream and haven’t looked back! The only ingredient is frozen bananas. Then, you can add whatever else tickles your fancy. If you haven’t tried it yet your probably thinking that there’s no way it could taste as good as regular ice cream, but it does and you don’t have to feel guilty about eating it! 

Last night I made a Cherry Chocolate Chip ice cream and it was awesome. I don’t have a really fancy blender like a vitamix or an ice-cream maker (but I just used my food processor for this one) that works pretty good, well for making this ice cream anyway, but if you don’t have a high speed blender you might have to add just a very small amount of almond milk or some other kind of liquid to get things going.

3 Frozen Bananas
1 cup frozen cherries or any other berries
1/4 cup cacao nibs

Blend the ingredients into your food processor until well combined and forms an ice cream consistency.
Serve. Eat. Enjoy. That’s it!
