Crispy Kale Chips
Watch out, potato chips. Kale chips are my favourite in the “healthy greens” snack department. You won’t believe how easy these chips are to make at home, and the seasoning complements the kale beautifully. Bet you can’t eat just one! Take it from me, when it comes to kale chips, curly kale or cavolo nero works a treat.
Ingredients
8 curly kale leaves
2 tsp coconut oil melted
1/2 -1 tsp freshly ground spices (I used this super root blend which is a mix of turmeric, garlic, ginger & himalayan salt)
Directions
Heat oven to 90 oC with rack in middle.
Line oven tray with baking paper
Cut out and discard stems and center ribs from kale. Wash leaves and dry well. Chop up into bite sized pieces.
Transfer kale to a large bowl. Toss with oil, rubbing leaves to make sure they are well coated, then toss with spices and salt.
Working in batches, spread leaves in a single layer on lined sheet pans and bake, switching positions of sheets halfway through, until crisp, about 10 minutes.
Demolish!!
