Turmeric Cauliflower Rice Recipe
Shake up your side dish routine with this flavourful turmeric cauliflower rice! Simple, healthy and low in carbs, it’s a great make-ahead recipe for leftovers the next day. Filled with garlic, turmeric root spice and chopped parsley, it’s dairy free, gluten free and vegan. Cauliflower has many health benefits relating directly to gut health and skin health.
It is high in water and fibre, both of which are essential for maintaining a fully functioning digestive tract and regular bowel movements. Cauliflower contain sulphur-containing compounds, which support gut health by activating detoxification enzymes.
INGREDIENTS
2 Cups cauliflower, chopped finely
1 medium onion, diced
4 tablespoons of olive oil
2 cloves of garlic, finely chopped
2 teaspoons of turmeric powder or one turmeric root grated
1/2 cup of raisons, sultanas or currents
Zest of two lemons
2 teaspoons of fresh coriander or parsley chopped
4 servings
METHOD
Place cauliflower in a food processor and blitz until it resembles rice.
Add onion and 1 tablespoon of olive oil to a pan and cook over a low heat for five minutes
Add garlic and cook for another five minutes
Add turmeric and stir for another minute
Turn the heat up to medium-high and once sizzling, add the cauliflower rice to the pan with one tablespoon of olive oil.
Stir fry on high for five minutes
Remove from heat, mix in the remaining ingredients and season well with salt and pepper.
