Cauliflower rice is the bomb!

I have been fairly obsessed with cauliflower “rice” ever since discovering it earlier this year. This finely chopped cauliflower is one of those cheater ingredients that actually tastes legit. No joke. As a fried rice look-alike, this dish can hold its own. Bits of preservative free bacon and tender vegetables also make it a satisfying meal on its own. This still feels like comfort food to me ā€” just comfort food that’s sneaking a few more vegetables into my day.

This is super simple…..

1 medium head of organic cauliflower finely chopped (I use the grater in my food processor, but finely grated or chopped coarsely would suffice.
3 slices bacon – grilled and finely chopped
1 medium red onion, chopped finelyĀ 
1 stalk Celery diced + any other veges diced
2 tablespoons of butter
1-2 tablespoons of coconut oil
1 tsp Smoked Paprika
salt and pepper

After chopping up the cauliflowerā€¦

In a large frying pan, sautee the onions in the melted butter and coconut oil over medium heat until they are translucent. Add smoked paprika, stir fry for another 30 seconds then add the celery and any other veges you want to stir-fry, add cauliflower and stir through until oils are evenly coated over the rice. Cover the pan and gently cook the cauliflower for 5-10 minutes until softened. Add the bacon bits and taste for seasoning and add some additional salt and pepper. You can totally change up the seasoning and customize it to your tastes. A head of cauliflower makes a lot of rice so I have leftovers for brekkie that I will have with a couple of poached eggs….I love leftovers!!
